8:25 a.m. You stare at that soggy bowl of Cheerios, trying to force yourself to take another bite, wishing it were a slice of pie instead. Breakfast might (or might not) be the most important meal of the day, but there’s no denying that we always have room for dessert. Luckily, so does this week’s featured foodie, Krista Teigen of Destination Delish. She’s sharing five of her favorite ways to eat breakfast for dessert (psst: They’re still good for you!), and we dub her our hero.
Diving into a giant banana split with friends may be one of the best ways to end a meal. But when you’re craving those flavors first thing in the morning, these little bites get the job done. Pulverize banana chips, freeze-dried strawberries, and cocoa powder with sticky-sweet dates for each layer, then roll them into marbled, tri-flavored treats.
In an overnight oats rut? This bright, citrusy oatmeal is the solution. A blend of oats, chia seeds, lemon, and almond extract bring the flavors of the classic pie to your morning bowl. A giant cloud of fluffy coconut whipped cream on top will make you more excited for 8 a.m. than you ever thought possible.
Raise your hand if you’re one of those people who waits for the morning after Thanksgiving specifically to eat pumpkin pie for breakfast. It can’t be just us. This part-pudding-part-pie starts as a baked maple pumpkin custard, then gets piled into a glass or jar between vanilla Greek yogurt, pumpkin spice granola, and extra maple syrup.
While carrot cake does, in fact, involve vegetables, cutting into a slice before work might prep you for a serious sugar crash. Soak up all the taste of the cake with none of the lag with these breakfast quinoa bowls. If you don’t think a spoonful of almond butter mixed with quinoa tastes like cake batter, think again, my friend.
Did you know you can make caramel from fruit? “You’re welcome,” said Mother Earth. Dates mixed with nut butter, vanilla, and nondairy milk make a thick, sweet sauce that’s perfect for lobbing between tart apples and creamy oatmeal. Serve in jars or tall glasses to show off this breakfast’s layers.
