Pink macadamia cheese toasts with mixed berries and a balsamic reduction by @bjonr⠀

macadamia cheese⠀
1 cup soaked macadamia nuts⠀
2 tsp miso paste⠀
juice of half a lemon⠀
2 tsp apple cider vinegar⠀
1 tbsp nutritional yeast⠀
1 tbsp garlic⠀
2 tbsp melted dragon fruit / pitaya (from a frozen packet)⠀
8 tbsp water⠀
1/4 tsp pink salt⠀
balsamic reduction⠀
1/2 cup balsamic vinegar⠀
2 tbsp coconut sugar⠀
1/2 tsp pink salt⠀
1. all everything to your food processor except the water & melted pitaya⠀
2. once everything is blended add the pitaya and process again⠀
3. now add the water 1 tbsp at a time until you’ve added all 8 and its smooth⠀
4. now make the reduction buy bring everything to a boil and then switch to a low heat for 15 minutes until thickens⠀
5. now assemble your toasts with whatever you like, something savory or sweet. i prefer fruit because it works well with balsamic reductions! Enjoy!
