2 pints vegan vanilla ice cream, softened
1 cup crushed peppermint candies, divided
1 teaspoon peppermint extract
¾ cup vegan chocolate chips
¼ cup canned coconut milk
1 tablespoon agave
1 teaspoon vanilla extract
Toppings: vegan whipped cream, cherries, sprinkles, nuts, crumbled vegan cake or brownies, vegan marshmallows, etc.

Scrape the ice cream into the bowl of an electric mixer. Add ½ cup of the peppermint candies and the peppermint extract. Beat on medium-low speed until fully incorporated. Pour the ice cream into an 8 ½” x5” loaf pan, and sprinkle 2 tablespoons of crushed mints on top. Cover with plastic wrap touching the surface of the ice cream, and freeze until hard, about an hour.

For the chocolate sauce, melt the chocolate chips in a small saucepan over low heat. Remove from heat, and slowly stream in the coconut milk. Whisking until combined. Stir in the coconut milk, agave and vanilla extract until smooth.
Scoop the ice cream into serving bowls. Cover with chocolate sauce and crushed peppermints or toppings of your choice. (Store leftover chocolate sauce in the fridge in a heat-resistant airtight container, preferably a glass jar. To reheat, place the jar into a saucepan of warm water over a very low flame.
